CHEF CARLO
Born in the Philippines, Chef Carlo Narabal moved to San Diego, California in 1995. In his youth Chef Carlo spent a lot of time in the kitchen with his mom, grandparents, aunts, and uncles where he was assigned tasks like, rolling lumpia, cutting vegetables, washing bones, and/or whatever his family asked of him. Based on this experience in the kitchen cooking felt natural to him and inspired him to make a career out of the culinary arts.
Chef Carlo attended the Art Institute of San Diego and graduated with an Associate of Science Degree in Culinary Arts. While attending school Chef Carlo worked as a dishwasher and prep cook at a sushi restaurant. After admiring beautiful plates of sushi, seeing teriyaki sauce be made from scratch, and watching ramen broth simmer for 24 hours before being served, then observing the guests faces as they took their first bite, Chef Carlo knew he made the right decision.
In 2013 Chef Carlo joined JC Resort in Temecula, California as a Sous Chef, in 2014 Chef Carlo worked for Pechanga Resort & Casino at the same capacity. In 2016 Chef Carlo joined Pacific Hospitality Group as Chef De Cuisine and in 2022 he transferred to The Meritage Resort to open the French inspired restaurant Village Bistro where he still enjoys that same feeling of watching happy guests take their first bite.
